Ingredients
- 8 oz. 230 g bacon
- 12 12 mushrooms
- 2 tbsp 2 tbsp butter
- 9 oz. (1¼ cups) 260 g (270 ml) cream cheese
- 3 tbsp 3 tbsp fresh chives, finely chopped
- 1 tsp 1 tsp paprika powder
- salt and pepper

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Preheat the oven to 400°F (200°C). Grease a medium-sized baking dish with butter.
Start by frying the bacon until really crispy. Let cool and crush into crumbs. Save the bacon fat.
Remove the mushroom stems and chop them finely. Sauté in the bacon fat, adding butter if needed.
Place the mushrooms in the greased baking dish.
In a bowl, mix the crumbled bacon with the fried, chopped mushroom stems and the remaining ingredients. Add some of the mix to each mushroom.
Bake for 25-30 minutes or until the mushrooms turn golden brown.
Tip!
Not just for dinner anymore! These beautiful little bites also help fill out breakfast. Try them with creamy scrambled eggs or a cheesy omelet.
Air fryer method
Follow steps 2-5 of the recipe.
Preheat the air fryer to 375°F (190°C).
Place the stuffed mushrooms in the air fryer basket and fry for 15-20 minutes until golden.

I used this as a base recipe. I used all ingredients plus more. My hubby doesn't like mushrooms. So I only used part of the stems and the rest was cooked chicken. I added some onion and garlic powder, fresh dill and parsley and cheddar cheese. They were very tasty and easy to change up for the occassion or by what you have on hand!

This was a hit for my family! I made some adaptations: only used 5 ounces cream cheese, and added about a half cup of shredded cheddar cheese, also added in about a half cup of fresh chopped parsley - stuffed inside Portabella mushrooms. It was delicious!

My family loves these. I've made them quite a few times and they are a favorite! I switch up the ingredients in the 'stuffing' sometimes to make a different taste. They always come out perfectly. The only thing I changed is that I put them on a broiler pan in the over because the mushrooms emit so much water that the dish got a bit soggy. The broiler pan works perfectly and all the 'water' drips below and the mushrooms remain dry. THANK YOU for this amazing recipe!

What is a kcal?
Scientifically, 1 kilocalorie (1000 calories or 1 kcal) means the energy it takes to raise the temperature of 1kg of water by 1°C.
Calories are units of energy so small that a tiny cookie can provide thousands of them. To ease calculations, energy is expressed in 1000-calorie units known as kilocalories. That is, 1 Calorie is equivalent to 1 kilocalorie; the capital C in Calories denotes kcal on food labels, calories and kilocalories are used interchangeably to mean the same thing. In other words, it is just as normal and acceptable for people to use the small “c” instead of big “C” and say “1 gram of fat gives us 9 calories” in the nutrition world as “1 gram of fat gives us 9 kilocalories or 9000 calories” in the physical science world.
